How to Measure Sucralose: mg Dosing, Scoops, and Dilution

Pure sucralose is 600x sweeter than sugar, so you dose it in milligrams. Practical methods — micro-scoops, making a 1 percent or 10 percent dilution, and liquid drops — with a sugar-equivalent dosing table.

Pure sucralose is about 600 times sweeter than sugar, which means a teaspoon of sugar's sweetness is only a few milligrams of powder. That potency is the whole value proposition — a small jar sweetens like kilos of sugar — but it also means you can't dose it by the spoon. This guide gives you three reliable methods and a dosing table so you never over-sweeten.

These are sweetness equivalents, not weight swaps — you are matching how sweet it tastes, not the mass. Perceived sweetness varies with temperature, acidity, and what else is in the recipe, so treat the table as a starting point and taste.

Why you can't just weigh it

A typical kitchen scale reads in 1-gram increments and is unreliable below a few grams. A 6 mg coffee dose is 0.006 g — far below what a kitchen scale can resolve. Trying to eyeball single-digit milligrams leads to wildly over-sweetened drinks (the most common beginner mistake). The solution is to measure something larger and accurate, then work in known fractions. That's what the three methods below do.

Method 1: The micro-scoop

Sucralose is often sold or paired with a micro-scoop calibrated to a specific volume that holds a known milligram amount of the powder — commonly in the range of a few to ~25 mg per level scoop, depending on the scoop.

  • Find your scoop's dose. If the scoop is rated (e.g., "≈10 mg per level scoop"), use that. If not, calibrate it once: make a dilution (Method 2), or fill and count scoops against a weighed larger amount.
  • Level, don't heap. Consistency comes from a flat, level scoop every time.
  • Example: With a ~10 mg scoop, roughly 2/3 of a scoop sweetens a coffee (≈6–7 mg = 1 tsp sugar); 2 scoops ≈ 1 tbsp sugar.

Micro-scoops are the fastest everyday method for single drinks. For anything precise or repeatable, use a dilution.

Method 2: Make a dilution (the most accurate DIY method)

Diluting turns milligram dosing into easy volume or drop measurement. Two common recipes:

Liquid stock — 1% solution (great for drinks and homebrew bench-testing):

  1. Weigh 1 gram of pure sucralose (a 1 g amount is measurable on many scales; a milligram jeweler's scale is even better).
  2. Dissolve it fully in 100 mL of water (add a pinch of preservative or refrigerate and use within a week or two).
  3. Now each 1 mL = 10 mg sucralose, and a standard dropper drop is ~0.05 mL ≈ 0.5 mg. A coffee (≈6–7 mg) is about 0.6–0.7 mL, or ~13 drops.

Dry 10% blend (great for baking, so the chart works spoon-wise):

  1. Weigh 10 g of sucralose and 90 g of a neutral dry carrier (e.g., powdered erythritol or a fine bulking agent). Mix thoroughly and evenly.
  2. The blend is 10% sucralose, so 10× the chart weight of blend delivers the target dose. To match 1 cup sugar (~330 mg sucralose), use ~3.3 g of blend.
  3. This lets you scoop a workable amount on a kitchen scale while still delivering milligram-accurate sucralose. Mix well — even distribution is what makes it accurate.

Dilutions are the best method when you care about consistency and repeatability (baking, batches, homebrew).

Method 3: Liquid sucralose drops

Ready-made liquid sucralose takes the math out entirely: the product states a mg-per-drop or per-serving dose, and you just count drops into your cup, batter, or carboy.

  • Highly soluble and instant in cold or hot liquids.
  • Ideal for coffee, tea, sparkling water, protein shakes, and homebrew bench-testing, where a drop or two is all you need.
  • Check the label's stated concentration and start with one drop, taste, add more — it's much easier than un-sweetening.

The universal rule: start low, taste, add

Whatever method you use, under-dose first and build up. Over-sweetening is hard to fix; adding a scoop or a drop takes seconds. This matters most in:

  • Hot drinks, where sweetness reads differently than at room temperature.
  • Homebrew back-sweetening, where acidity and carbonation shift perception — always bench-test on a sample first.
  • Baking, where an over-sweet batter can't be salvaged. Pair with a bulking agent per the baking guide.

Quick reference by use case

  • A single coffee or tea: ~2/3 of a ~10 mg micro-scoop, or ~13 drops of a 1% stock, or 1 drop of a concentrated liquid — taste and adjust.
  • A pitcher of iced tea or lemonade (to taste of ~1/2 cup sugar): ~165 mg — about 16 mL of a 1% stock, or ~1.6 g of a 10% dry blend.
  • A batch recipe (per cup of sugar): ~330 mg — pair with a bulking agent per the baking guide.
  • Homebrew back-sweetening: always bench-test on a measured sample first; a few mg per liter is a common starting range.

Common mistakes to avoid

  • Dumping dry powder straight into a large batch. It can clump and disperse unevenly; dissolve it in a little liquid first, or use a well-mixed dilution.
  • Guessing "a pinch." A pinch of a 600× sweetener is wildly more than a pinch of sugar — this is the fast track to an inedibly sweet drink.
  • Reusing a wet scoop in the jar, which introduces moisture and causes caking.
  • Assuming all "sucralose" is equally concentrated. Blended retail products are diluted with filler by an unknown amount, so a scoop of one is not a scoop of another.
